The Winemaker

The Domaine de Pajot is located in Gascogne on the hillsides that dominate the city of Eauze. Its history is linked to the Barreau family. 
In 1973, the grandfather, Edmond, a Norman farmer, acquired lands in the Hameau de Pajot in order to create a vineyard in Armagnac and entrusts the task to his son Jean. In 1984, her grandson, Damien, settles in the domain he still manages with the help of his son Clément since 2015. 
The vineyard is made up of white and red vines, ten grape varieties spread over various soils, sands, silts, clays, representative de la Gascogne.
This wealth of grape varieties, this palette of terroirs, gives them a multitude of possibilities in the development of their organic wines from Gascogne White, red and rosé… but also flocs and armagnacs.

The Appellation

La Gascogne is located between the Garonne to the north, the Landes forest at to the west and the Pyrenees to the south. The geographical area of ​​the IGP "Coasts of Gascogne "corresponds to the Armagnac vineyard. There are 3 terroirs : that of "Ténarèze", the soils are predominantly clay-limestone, giving more robust, fatty and powerfully aromatic wines; further south, in the Haut-Armagnac area, the vines flourish on gravel and peyrusquets allowing white wines to be balanced and fine; finally, further west, towards the clay Landes, even sandy, in the Bas-Armagnac region, white wines are renowned for their fruity aromas with nuances of spring flowers. 
The climate is oceanic and temperate: just enough sun, rain and freshness to pamper the vines and let them hatch, at optimal maturity, a rich, complex and seductive aromatic palette ...
