Description
An exceptional Pinot Noir that Christian Eblin introduced us to during our visit to his Alsatian domain.
Our opinion : First word from Eric during the tasting: "This is the bomb". The color is very clear, slightly dark. One of the peculiarities of Pinot Noir. On the nose, we immediately catch the black cherry and a smoky side. In the end, it is a wine with a very nice structure. Temperature service : 12 - 16°C To drink : 2021 - 2025 Certification : Biodynamic Demeter certification Technical sheet

Very old wine-growing families, the Eblins and the Fuchs have been linked since 1956 following the marriage of Marie Madeleine Fuchs (pronounced Foux) and Henri Joseph Eblin.
The Eblin family tree dates back to 1294, when the coat of arms was deposited. That of the Fuchs, since 1615, date of their installation as winegrowers in Zellenberg.
Following the union of the current successor, Christian Eblin, to Laurence Leininger, herself descendant of a family of winegrowers established in Hunawihr for several generations. The geological palette of the estate was expanded in 2006 with several plots of Marno-limestone compositions, including the most famous Rosacker and Muelforst in Hunawihr and Mandelberg in Mittelwihr.
The AOC Alsace can be broken down into seven grape varieties (Muscat, Sylvaner, Pinot blanc, Pinot gris, Pinot noir, Riesling and Gewurztraminer) and two blends (Edelzwicker and Gentil).
This is therefore a unique grape variety: Sylvaner. The AOC Alsace indicates a grape variety but also a geographical indication such as a locality or a municipality. A control of AOC Alsace wines is organized both at the level of the production tool (vines and cellars) and at the organoleptic level (tasting).
