Our opinionThe robe is an intense garnet color with black reflections. The nose is an explosion of fruits, such as cherries and raspberries. There are also touches of prune and cocoa. On the palate, this wine is balanced between roundness, tannins and fruit. Its fat and spicy side will allow it to go perfectly with an excellent lamb chop.

The winemaker

Domaine Michelin, Les Combes Cachées is the culmination of the dream of three childhood friends and their shared passion for wine. These 3 friends are Xavier Michelin, Michel Pousse and François Aumonier. After two years of research, they found the ideal terroir and vines. This terroir is found in La Livinière, the premier cru of Languedoc.

Old vines, the only ones planted on the hillsides in small valleys that descend the hills at an altitude of 400m and which are organically farmed. The team partnered with David Ciry, an experienced winemaker from the region who has global winemaking experience as a consultant.

With the support of friends and family, Domaine Les Combes Cachées launched its first cuvée in 2015. It has already been critically acclaimed. Since then, the vineyard has developed and structured. It also has a brand new wine cellar in the old distillery of the 1907 Siran cooperative cellar, which has been rehabilitated. Their vines have always been managed strictly according to the principles of organic farming and the winemaking also follows the same rules.

The Appellation

The AOC Minervois-La Livinière is an appellation resulting from the AOC Minervois. It defines a terroir which is located in the heart of the natural region, known as the “Petit Causse”, located at the bottom of the piedmont of the Montagne Noire. It brings together six municipalities: Azillanet, Azille, Cesseras, Félines Minervois, La Livinière and Siran. The vineyard covers an area of ​​300 ha.

Geologically, the AOC Minervois-La Livinière is a miniature replica of the Minervois territory. The soils present an alternation of compact limestone and marl. The majority grape varieties of AOC Minervois-La Livinière are Syrah, Mourvèdre and Grenache. They must represent at least 60% in the grape variety (including 40% minimum of Syrah or Mourvèdre).
